Paddy Wagon: Irish Flag Salad
Friends! I've missed you. We've been pretty busy here in Spring Valley. The bodies are piling up and there's a new guy in town causing all kinds of trouble. I was raised right (hi, Mom) so I won't say any names. I think we all know who I'm talking about.
Anyway, Carl and I have been working round the clock, which means we haven't been eating well. You know how it is. The vending machine is right there and Alex has been super helpful, sending up pastries and coffee whenever he can. He's such a pal. Hi, Alex!
So, I thought we'd do something a little on the lighter side this time.
Irish Flag Salad, it's patriotic, it's light, and it's easy to make.
Here's what you'll need:
1 package (6 ounces) fresh baby spinach
2 medium pears, thinly sliced
2 medium oranges, peeled and sectioned
2 tablespoons crumbled feta cheese
2 tablespoons chopped pistachios
Now for the dressing:
3 tablespoons canola oil
2 tablespoons orange juice
1 tablespoon lemon juice
1 teaspoon honey
1/2 teaspoon grated orange zest
1/4 teaspoon salt
This is meant for a four people. So, let's say, for example, Carl invites Catherine and me over for dinner one night. It could happen. It hasn't happened yet, but it could. So, I'd take the spinach, divide it evenly on the four plates, distribute the fruit and cheese evenly, whisk up the dressing ingredients, dress the salad - WE CAN'T HAVE A NAKED SALAD! - and sprinkle with the pistachios.
Easy peasy. Which is great because we have been SUPER busy. I never imagined being a detective would require this much work.
